Open Flame Grilled Wild Turkey Breast

There is nothing like the crisp pre-dawn silence of a turkey hunt. The long grass, heavy with dew, and the slow return of sunlight just before the first crack of a gobbler in the distance, leading to the realization that you are utterly surrounded by turkeys as the spring thunder begins.
This recipe was designed with these moments in mind, pulling inspiration from this incredibly wild moment, bringing that same crisp and vivid experience into the technique and flavors of the meal you'll share as you tell the story of the adventure you had.

Equipment

  • 1 Open Firepit
  • 1 Large Flat Rock As thin and Pan like as possible
  • 1 Knife

Ingredients
  

  • 1 Tbsp Kosher Salt
  • 1/2 Tbsp Pepper
  • 2 Wild Turkey Breast
  • 1/4 Cup Extra Virgin Olive Oil
  • 4 Sprigs Thyme
  • 3 Cloves Crushed Garlic

Instructions
 

Build the Cooking Fire

  • Using rocks, build a round firepit that is roughly the height of a basketball, and diameter of three basketballs grouped together
  • Find small sticks that can be used as kindling, and larger sticks that can be used to fuel your fire
  • Using paper/cardboard, build a small pyramid with the paper/carboard on the bottom and small sticks built on-top
  • Using matches or a lighter, light the paper/cardboard to start the fire
  • Add the larger sticks to the fire until the fire is burning and coals have begun to form a base to your fire
  • Spread the coals of the fire out and continue to lay sticks in a grid like pattern to keep a low burning fire

Prepare the Cooking Stone

  • Find a large flat stone, as thin as possible and large enough to stretch across one corner of the firepit
  • Thoroughly wash the stone to remove as much dirt and moss growth as possible
  • Place the stone across one corner of the firepit
  • Build up the fire underneath the stone to raise the temperature of the stone

Prepare and Cook the Wild Turkey Breast

  • Rub oil on the Turkey breast until thoroughly covered
  • Marinate the Turkey breast using the pepper, salt and garlic
  • Soak the sprigs of Thyme in the remaining oil
  • Lay the sprigs of Thyme on the hot Cooking Stone
  • Place the seasoned Turkey breast on top of the Thyme on the Cooking Stone and cook each side for 4-6 minutes
  • Serve and enjoy
